Peruvian-Style Aji Verde Chicken Wings

Serves 6 - Prep Time: 30 minutes - Cook Time: 15 minutes

Step aside buffalo, there’s a superior wing flavor in town

Talk about a complimentary duo, these wings are spicy AND creamy. Serve them at your next BBQ, tailgate, or even for yourself at home because they’re that good you won’t want to share.


Chicken Marinade

3 lbs chicken wings
6 garlic cloves, chopped
2 tsp cumin
2 tsp paprika
2 tsp ancho chile powder
1/4 cup white wine vinegar
3 tbsp soy sauce
2 tbsp lime juice
1 tsp dijon mustard
3 tbsp olive oil
Salt and pepper to taste

Aji Verde Sauce

3/4 cup cilantro
1/4 cup mint
1 serrano, seeds removed
2 garlic cloves
1 tsp honey
3 tbsp lime juice
1/4 cup olive oil
1/2 cup mayonnaise
2 oz cotija cheese
Salt and pepper

Directions

  1. In a bowl, whisk together the marinade ingredients. Pat the chicken wings dry then toss in the marinade. Cover and refrigerate for at least 30 minutes or up to overnight for ultimate flavor.

  2. In a blender or food processor, mix together the aji verde sauce ingredients until smooth. Refrigerate until needed.

  3. Preheat your BBQ to 350°F. Add the marinaded wings and grill for about 15 minutes or until fully cooked and have reach an internal temperature of 165F.

  4. Serve the wings on a platter garnished with sauce, fresh cilantro, and crumbled cotija cheese. Enjoy!

Note: the marinade and sauce can be made the night before so all you have to do is grill them the next day.
