Roasted Chipotle Halibut with Kiwi Cucumber Salsa

Serves 2 - Prep Time: 10 minutes - Cook Time: 30 minutes

Salsa like you’ve never tasted

When I think of salsa, the traditional fruits that come to mind are tomatoes, pineapple, and mango. But have you ever tried kiwi? Its sweet and sour flavor combined with crunchy cucumbers really compliment any grilled, roasted, or smoked fish.


Ingredients

1 lb halibut filet
1 tsp chipotle powder
2 tbsp olive oil
2 tbsp red onion, minced
1/2 cup english cucumber, small dice
2 kiwi, peeled and small dice
4 tsp jalapeño, minced
¼ cup cilantro, leaves and stems chopped
1/2 lime, juiced
Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.

  2. Combine olive oil and chipotle powder together. Brush onto the halibut and sprinkle with salt and pepper.

  3. Cook in the oven for 30-35 minutes, or until the internal temperature reaches 130°F.

  4. While the fish cooks, prepare the salsa. In a bowl, add red onion, cucumber, kiwi, jalapeno, cilantro, lime juice, salt and pepper. Toss to combine and set aside.

  5. Remove fish from the oven once cooked then serve with salsa.
